Island Pork of Karyn Johnson - Recipefy

1.5 lbs lean pork, cut in 1 inch cubes
14 oz can pineapple chunks, save juice
1 medium onion, chopped
1 tbsp oil
3 tbsp brown sugar
3 tbsp corn starch
3/4 tsp salt
1 1/2 cups water
4 1/2 tbsp vinegar
3 tbsp ketchup
1 1/2 tbsp soy sauce
1 green or red pepper, diced
4 cloves garlic

1. Brown pork, onion and garlic in hot oil in large pot.

2. Meanwhile, combine sugar, cornstarch, salt and pepper. Gradually add in water and pineapple juice. Add vinegar, ketchup and soysauce; mix.

3. Add this mixture to browned meat, stirring constantly until thick. Continue cooking and stirring, 2-3 minutes. Cover and simmer for 30 minutes; until meat is tender.

4. Just before serving add green pepper and pineapple, cook 3 minutes.

5. Serve over rice,

6. I make 2 cups Uncle Bens converted rice, 4 cups water or broth.
