Italian sausage and peppers

2 tbsp vegetable oil
4 Longo's sausage links
2 colored peppers (red, yellow), sliced thin
2 sweet onions, sliced thin
2 cloves minced garlic (or more)
1 (14.5 oz) can diced tomatoes
1/2 tsp salt
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp black pepper
1/4 tsp red pepper flakes

Prep. Time → 5 min

Cook Time → 28 min

1. 1. Add vegetable oil to a large pan and heat over med-high heat. Add sausages and cook until browned on all sides. Remove sausage from pan and set aside. (Don't need to cook through at this point).
2. Add onions and peppers to grease left in pan and cook over medium heat until softened. Add garlic and cook for 1 minute.
3. Slice sausage into 1 1/2" pieces.
4. Return sausage to pan along with all other ingredients.
5. Cook for 5 to 10 minutes, until sausage is cooked through and sauce has thickened.
6. Serve on hoagie rolls if desired.
