Saw this kimchi stew recipe on a Korean television programme. They didn't give any measurements! Frustrating as it is, my mom and I guessed at the proportions and here is what we recommend.

Pork (pork belly or pork leg) [4 portions]
Kimchi [4 portions]
Sesame seeds [1 teaspoon per 100g of pork]
Shrimp paste [1 teaspoon per 100g]
Garlic [1 clove per 100g]
Pepper [to taste]
Mirin [1 teaspoon per 100g]
Anchovies
Green onions
Broth [1 bowl per 100g meat]

Prep. Time → 30 min

Cook Time → 60 min

1. Prepare the broth:
1. Boil a handful of anchovies and 2 stalks of green onions with 5 bowls of water.

2. Prepare meat:
1. Drain the liquid from the shrimp paste and ground into a paste together with the sesame seeds until a "wet sand like" consistency.
2. Mince the garlic.
3. Cut the pork into bite size pieces.
4. Marinate the pork with the paste, minced garlic, mirin and pepper. Also add in some juice from the kimchi.

3. Cooking:
1. In a large pot, brown the pork on high heat and set aside.
2. Scrape the seasoning off the kimchi and set aside. Stir-fry the kimchi in the same pot till fragrant.
3. Add the pork back into the pot.
4. Add broth and kimchi seasoning.
5. Bring to a boil and simmer for an hour until the meat is tender.
6. Turn off the heat and top with shredded green onions.
