Lebanese baba ganoush of Forbidden - Recipefy

6 large aubergines, sliced lengthways
45ml olive oil
10ml ground cumin
salt and freshly ground black pepper, to taste
250ml thick Greek yoghurt
60ml fresh mint leaves, chopped
fresh crusty bread, to serve

Prep. Time → 20 min

Cook Time → 30 min

1. preheat oven to 200C

2. place aubergines on large baking tray. Drizzle with 15ml olive oil and ground cumin

3. season and bake in oven until soft and slightly charred (about 30min)

4. remove aubergine from oven and allow to cool

5. scoop out flesh from aubergine skin into large bowl

6. combine cooled aubergine with remaining olive oil, yoghurt, fresh mint and seasoning

7. serve with plenty of crusty bread
