light cream of broccoli soup recipe

1 1/2 Tbsp olive oil
1 onion, chopped
1 celery chopped
3 cloves of garlic, peeled and chopped
1 large potato, peeled and diced
6 broccoli florets
4 cups chicken stock
1/4 cup half and half
1 salt and pepper to taste

Prep. Time → 10 min

Cook Time → 25 min

1. 1. In a soup pot with olive oil, on medium heat, add veggies. (expect broccoli) season with salt and pepper. Let cook 4 to 5 mins till soft and color:

2. 2. Add in broccoli and stock, and water to cover broccoli. Let simmer 20 mins. Till broccoli is soft:

3. 3. Puree in blender till smooth. Put back in pot and add half and half creamer: mix. Heat back on till warm. Serve.
