Lobster Pasta of Karyn Johnson - Recipefy

1 large (2lb) Lobster
3 tbsp butter x2
1 large onion, chopped
3 cloves garlic
1-28oz can tomatoes
4 tbsp olive oil
black pepper
Cajun seasoning, to taste
1 cup heavy cream
1 tbsp corn starch
16oz package sliced mushrooms
1-12oz package dry spaghetti
1 tbsp butter
1 clove garlic minced
chopped fresh parsley

1. Cook lobster in boiling water, 6-8 minutes, use same water for pasta.

2. Melt 2 tbsp butter in large skillet over medium heat, add mushrooms cook for 3-5 minutes. Add another tbsp butter with onion and garlic, do not let brown.

3. Cut lobster in half lengthwise, place halves meaty side down in skillet with vegetables. Cook about 3 minutes.Add tomatoes to skillet and turn heat to high and bring to a boil. Add olive oil and seasoning.Cook stirring constantly for 5-7 minutes.

4. Slowly pour in half the cream. Add cornstarch to carton, close and shake. Add to skillet.Turn heat down to med/low. Keep warm stirring occasionally till pasta is done.

Drain spaghetti, stir in remaining butter and garlic. Cut up lobster meat, mix all together. Sprinkle with parsley and serve.
