Madeleines of Forbidden - Recipefy

butter, for greasing
4 extra-large eggs
2 extra-large egg yolks
135g castor sugar (or 20g honey and 75g sugar)
135g cake flour
8g yeast
150g butter, melted
zest of 2 lemons
juice of 1 lemon

Prep. Time → 15 min

Cook Time → 10-15 min

1. preheat oven to 210C and greast moulds with butter and place in fridge

2. in large bowl using electric whisk, combine eggs, egg yolks and sugar, beat until mixture is white

3. add flour and yeast and mis together until you achieve smooth, shiny dough

4. add melted butter and mix again, followed by lemon zest and juice and mix well

5. pour batter into moulds and bake for 5min at 210C, then lower temperature to 200C till madeleines are golden in colour
