maple quinoa pudding

½ cup Fair Trade quinoa – cooked to instructions on package and allowed to cool

1 cup nonfat ricotta cheese
1 cup silken tofu
3 tbsp maple syrup
1 tbsp Fair Trade Vanilla
5 oz assorted Frutos Dried Fruit, chopped

Prep. Time → 45 min

1. Whip together ricotta and tofu until smooth.
Stir in maple syrup and vanilla.
Stir in cooked quinoa until well blended.
Stir in chopped fruit.
