Mashed Cauliflower of jenn - Recipefy

1 medium head cauliflower
1 tbsp cream cheese, softened
1/4 cup grated Parmesan
1/2 tsp minced garlic
1/8 tsp straight chicken base or bullion OR 1/2 tsp salt
1/8 tsp freshly ground black pepper

optional: unsalted butter for serving
optional: 1/2 tsp chopped chives for garnish

1. Cut cauliflower into small pieces and steam until tender. Pat florets dry between paper towels.

2. Puree in a food processor w/ all other ingredients until almost smooth. (You want a little bit of texture.)

3. Serve w/ butter and/or chives on top.

4. NOTES: Use roasted garlic or rosemary - Sub out cream cheese/parm cheese for olive oil or heavy cream - Can use this recipe with just cauliflower and some kind of thickener (olive oil)
