Mediterranean pork chops

Sea salt
Pepper
2 teaspoons of Oregano
Olive oil
The juice of one lemon
1 ball of Buffalo mozzarella
100g-cured chorizo sausage diced
Prep. Time → 10 min
Cook Time → 6 min
1. Start by pre heating an oven to 220°c,425°f, gas mark 7 and making several cuts into the fat of the chops
2. Season both sides of the chops with salt and pepper and sprinkle the oregano and olive oil and pat on it to get the flavours to stick and squeeze lemon juice on it
3. Place in a pan on a high heat and cook for 1 minute each side
4. Take the pan off the and tear the mozzarella and diced chorizo over the chops and place in the oven for 4 minutes
5. Take out of the oven baste with the juices at the bottom of the pan
6. Take out of the pan and let it rest for 2-5 minutes
7. Serve with a salad of your choice from any of the 21 countries that have a shore on the Mediterranean Sea
