Mexican Rice of Bobby Keillor - Recipefy

3 TBSP oil
1 C uncooked long grain rice
2 cloves minced garlic
1/2 tsp salt
1/2 tsp ground cumin
1/4 C chopped onion
1/2 C tomato sauce
2 C chicken broth

Prep. Time → 5 min

Cook Time → 25 min

1. Heat oil in large saucepan over medium heat and add onion, garlic & rice. Cook, stirring constantly, until puffed & golden. While the rice is cooking, sprinkle with salt & cumin.

2. Stir in tomato sauce & chicken broth, bring to a boil.

3. Reduce heat to low, cover and simmer for 20 - 25 minutes. Fluff with a fork.

4. Serve with Creamy Chicken Enchiladas.
