Mom's carrot cake

3 cups grated carrots
4 eggs
1 cup salad oil
2 cups sugar
2 cups self-rising flour
1 cup black walnuts, chopped
1 teaspoon vanilla
1/2 teaspoon walnut extract
1 teaspoon cinnamon

Buttermilk Glaze
1/2 cup buttermilk
1 cup sugar
1/2 teaspoon baking soda
1 tablespoon white corn syrup

Prep. Time → 15 min

Cook Time → 90 min

1. Mix all ingredients together until well blended. Pour into greased tube pan with removable bottom.

2. Bake at 350 degrees F for 1-1/2 hours.* Remove from pan and glaze while cake is still hot.

3. *If you use a bundt pan, bake for 1-1/4 hours.

4. Buttermilk Glaze:
Mix all ingredients together until well blended and pour uncooked glaze on top of hot cake.
