Mom's creamy tortellini tomato soup

1/2 cup butter
2 TBSP oil
1 large chopped onion
2 TBSP minced garlic
1/2 tsp salt
1/2 tsp ground pepper
Pinch of sugar
Just under 3/4 cup flour
6 cups chicken broth plus 2 chicken bullion cubes
3 - 15 ounce cans of crushed tomatoes
1- pouch of dried onion soup mix
2 TBSP dried basil
2 -9 ounce packages of frozen tortellini
2 cups half and half (can use milk)
3 TBSP grated Parmesan cheese

Prep. Time → 15 min

Cook Time → 45 min

1. Sauté onions and garlic in butter and oil until softened

2. Sprinkle flour over mix to make a roux; pour in chicken broth, chicken bullion cubes, onion soup mix and whisk until no lumps

3. Add crushed tomatoes. Add basil salt, pepper and sugar. Simmer until thickens and for additional 30 minutes

4. Boil tortellini as directed on package. Rinse and set aside

5. Once to your desired tastes add half and half and Parmesan cheese and slowly bring up to desired temperature. Add tortellini and serve with warm crusty bread.
