Onion and dill new potatoes
Recipe by1 3/4 pounds small new red potatoes, quartered
1/4 cup onion, finely chopped
3 tablespoons butter
1 tablespoon fresh dill, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
Prep. Time → 10 min
Cook Time → 35 min
1. In a 3-quart saucepan, place potatoes and enough water to cover. Cook over high heat until water comes to a full boil. Reduce heat to medium.
2. Continue cooking until potatoes are fork tender (15 to 20 minutes); drain. Return potatoes to pan. In a small bowl, stir together all remaining ingredients; pour over potatoes.
3. Cook over medium heat, gently stirring occasionally, until heated through.
