Raw vegan kale salad*
Recipe by1 bunch of organic curly kale
2-3 tbsp olive oil
1-3 tsp sea salt
1/2-2 tsp cayenne pepper (to taste)
2 tsp onion powder (to taste)
1/8-1/4 cup sunflower seeds (un-roasted)
1/2-1 avocado pitted and sliced (optional if you want it to be creamy)
1 lemon fresh juiced (no seeeeeeeds!)
* 3-4 tbsp nutritional yeast (to taste) -- If you wan't REAL raw you will need to exclude this, as "nooch" is not raw; it will make the salad a bit more hearty and provides vegan b12!!
Prep. Time → 10 min
Cook Time → 10 min
1. Wash the kale very well
2. Remove the kale stalks either using your hands or a knife
3. Cut the leaves into appetizing sizes (not too small though)
4. Put kale into a large bowl
5. Add olive oil & salt to the bowl with the kale
6. With your already cleaned hands, massage the oil and salt into the kale -- do not skimp on your massage time. This process is what softens the kale and makes it awesome for salad!
7. Let the olive oil massaged kale sit for 5-20 minutes depending on how soft you want the kale.
8. Use the time waiting for the kale to sit juicing the lemon
9. Pour the lemon juice over the kale being cautious not to get seeds in kale
10. Using two forks mix the lemon juice into the kale
11. Mix in the cayenne pepper, onion powder, sunflower seeds, nutritional yeast
12. If you elected for the creamy version, mix in the avocado
13. Serve and enjoy!
