Roasted Shrimp and Orzo Salad of Michele Poole - Recipefy

Kosher salt
Good olive oil3/4lb orzo
1/2 C freshly squeezed lemon juice (3lemons)
Fresh ground black pepper
2lbs(16-18) Shrimp, peeled and deveined shrimp
1 C minced scallions, white and green parts, I have used green onions
1 C fresh Dill
1 C chopped fresh flat leaf parsley
1 cucumber, unpeeled, seeded and medium diced
1/2 C small diced red onions
3/4lb good feta cheese, large diced

1. 1.
Per heat oven to 400

Fill a large pot with water add 1 tbsp salt and splash of oil, bring to a boil. Add the orzo and cook for 9 to 11 min, stirring occasionally, till Dante Drain and put into large bowl whisk together the lemon juice, 1/2 cup olive oil,2 tsp salt and 1 tsp of pepper. Pour over the hot pasta and stir well

Meanwhile place the shrimp on a cookie sheet pan, drizzle with olive oil and sprinkle with salt and pepper. Toss to combine and spread out in a single layer. Roast for 5 to 6 min. Until shrimp or cooked through. Don’t over cooked.

Add shrimp to the orzo and then add the scallion, dill parsley cucumber, onion , salt and pepper. Toss well. Add feta and stir carefully. Set aside at room temperature for an hour or refridgerate overnight. Bring back to room temp before serving
