Scottish Spice Cake of Sarah Blackler - Recipefy

2 eggs
4 fl oz sunflower oil
2 tbsp molasses
3 tbsp syrup (don't try this recipe with all syrup)
12 oz plain flour
2 tsp ground ginger
8 cloves, ground up
2 tsp ground coriander (this was what took me so long to work out)
1tsp Bicarb of soda
handful of chopped dates
1tbsp coconut
1 bananna
1 chopped peeled apple
milk to mix

1. reserve dates, bananna and apple

2. mix all else in mixer, with enough milk to make mixture loose but not sploshy

3. add dates

4. add bannana and apple

5. bake at gas mark 4 for 1.25 hours with foil on top after 0.5 hour.

6. Slightly crumbly. Probably still needs work on getting it firmer. The taste is there though - nice cake :)
