Simple Farmer's Market Salad of Michael - Recipefy

For the salad: 4 eggs, 1 avocado, handful cherry tomatoes, 1 red pepper, handful rocket, a few leave sorrel, a few basil leaves, 2 slices crusty bread, edible flowers (optional)

For the dressing: A good glug of quality olive oil, juice of 1 lemon, teaspoon honey, teaspoon wholegrain mustard

Prep. Time → 5 minutes min

Cook Time → 10 minutes min

1. This recipe relies souly on the quality and freshness of the ingredients. Buy from a farmer's market or quality greengrocers on the morning that you want to prepare the salad. Buy organic wherever possible.

2. Put the eggs in to boil. Once the water starts to boil, turn off the heat and leave eggs in the pan for approximately 10 minutes. Or until hard boiled (with a little softness to the yolk)

3. Whilst the eggs are gently cooking, wash all your leaves (rocket, sorrel, basil) thoroughly and mix together. Slice the tomatoes, pepper and avocado and mix in with the leaves, being careful not to break up the avocado.

4. Toast your bread (I use olive bread) and slice into large chunks, mix in with the salad.

5. Finally, once the eggs are ready, peel them under cold water (to avoid burning your fingers). Be gentle and try not to pull the eggs apart. Once peeled, slice through the middle and mix into the salad.

6. Make your dressing seperately by mixing all ingredients together in a small jug or bowl. Pour over salad liberally
