Spicy bean mush

3 cans of assorted beans (flageolet, cannelini, kidney, adzuki, black eyed all work well)
cooked sausages, sliced into coins
4 fresh tomatoes
1 onion
3 cloves garlic
juice of half a lemon
1 tbsp chopped coriander
2 spring onions, chopped
half a small jar of green olives

ciabatta to serve

Prep. Time → 10 min

Cook Time → 15 min

1. Fry off onions and garlic, and add cooked sausage slices. When starting to colour add all ingredients except the corianger and spring onions and simmer for 10 mins. Add spring onions and coriander last and stir through before serving.
