Stir-Fried Chicken Lo Mein of Kelly Barton - Recipefy

1 tbsp oil
10 oz diced chicken breast
6 oz lo mein noodles
1 red bell pepper thinly sliced
6 oz carrots peeled and cut into half moons
2 green onions thinly sliced
6 oz green cabbage thinly sliced
1/4 cup water
1 oz honey
1 oz soy sauce
3 oz katsu sauce
3 g toasted sesame seeds
salt and pepper

can add anything else you want - broccoli, snap peas, mushroom, prawns, etc.

1. 1. Bring a med pot of salted water to boil.

2. 2. In a large pot, heat the oil over med high heat until hot. Season chicken with salt and pepper and cook for 3 min per side until golden. Set chicken aside.

3. 3. In the same pot, heat a drizzle of oil over med high heat until hot. Add carrots and peppers for 5 min, stirring occasionally. Stir in cabbage and 1/4 cup of water (and other veggies if using). Cook for 5 mins until tender.

4. 4. Take pot off heat, add the honey, soy sauce, katsu sauce and cooked chicken. Toss to combine

5. 5. Meanwhile add the noodles to boiling water and cook for 1-3 min until tender but firm to bite (or follow instructions on package). Strain and rinse the noodles under warm water.

6. 6. Add the noodles to the chicken stir fry and serve with green onions and sesame seeds on top.
