Strawberry Cake of Molly Delaney - Recipefy

1 1/2 Cups of Strawberries
1 1/2 Cups of Butter
1 Cup of White Granulated Sugar
4 Cups of Confectioner's Sugar
2 Eggs
3 Teaspoons of Vanilla Extract
1 1/2 Cups All-Purpose Flour
1 3/4 Teaspoons of Baking Powder
1/2 Cup of Milk

Prep. Time → 20 min

Cook Time → 25 min

1. Cake:
1. Preheat oven to 350 degrees fahrenheit (175 degrees celsius). Grease the pan.
2. In a medium bowl, cream together the granulated sugar and half a cup of butter. Beat in the eggs, one at a time, then stir in two teaspoons of vanilla extract. Combine flour and baking powder to the mixture and stir well. Finally, stir in the milk until batter is smooth. Pour batter into the pan.
3. Bake for 30 minutes.

2. Frosting:
1. Slice one cup of strawberries and puree in a blender until smooth. Sautee the strawberry puree in a saucepan over medium heat. Bring the strawberries to a boil, stirring often for about 25 minutes. Allow the puree to cool.
2. Beat one cup of butter with an electric mixer. Add one cup of confectioner's sugar to butter and beat until light. Beat two tablespoons of strawberry puree and one teaspoon of vanilla extract into mixture. Repeat this step two more times.
4. Beat the last cup of confectioner's sugar into mixture.

3. Decoration:
After frosting the cake, slice the remaining strawberries in half and place around the rim of the cake.
