Super easy amazing mexican coconut flan
3/4 Cup sugar
200 ml Fresh Cream
1 can coconut cream
1 can sweetened Condensed milk
5 eggs, room temperature
Seeds of 1 vanilla pod, or 1 tablsepoon good quality vanilla extract or paste
1. Heat oven to 170 degrees celcius
Pour the sugar into a medium sized sauce pan, over a medium heat. Swirl and shake the sugar around as it melts, but not too much as it will crystallize. Careful not to burn the sugar, as soon as it's melted pour into a pie dish and swirl around until spread evenly.
2. Add all the remaining ingredients together either in a blender or a large bowl and mix with an electric mixer until smooth.
3. Pour into dish over caramelised sugar, put on baking tray covered in 1 inch of water and bake for 1 hour, until firm. Let cool completely before running a blunt knife around edges placing plate ontop and carefully flipping over.
