Super Easy Chicken Curry of Laura - Recipefy

This recipe is for those of you that love a damn hot curry. It is also for those as lazy as me that just want to bung some ingredients in a pan and let it work its magic alone.

2 breasts of Cooked Chicken
1 Onion
2 Cloves of Garlic
1 Green and 1 Red Pepper
1 Tbsp Vegetable oil
1 Very Large Mushroom
8 Florets of Broccoli
1 Tin of Chopped Tomatoes
Pinch of salt
Coriander Seeds, crushed (as many as you want depending on how hot you like your curries)
1 tsp Basil
2 tsp Curry Powder
2 tsp Cumin
1 tsp Tumeric
2 tsp Crushed chillies
1 tsp Ginger
1 tsp Cayenne Pepper
Water

Rice to Serve

Prep. Time → 20 min

Cook Time → 20 min

1. Heat oil in pan. Chop onion and fry along with the crushed garlic and chopped peppers. Add the chopped mushrooms and let all of this fry off for ten minutes.

2. Add the cooked chicken and then spice things up! Add the basil, curry powder, cumin, tumeric, chillies, ginger, cayenne. All of these spices will really bring the dish together. Add the chopped tomatoes and then fill the can with water and add that too.

3. Using either a pestle and mortar or the end of a rolling pin, crush the coriander seeds and add those along with a pinch of salt. At this point I add all of the spices I used again, but that's because I love my curries to burn the skin in my mouth!

4. Add Broccoli to the curry and then just let it simmer for 20 minutes. To see the difference this makes, have a taste before and after and you will really notice the effect that leaving the curry to boil has.

5. To serve, cook the rice in this time and eat immediately with all your favourite snacks.
