Sweet and Savory Acorn Squash of Kelly Snyder - Recipefy

2 whole Acorn Squash, Cut Into 8 Wedges Each
Olive Oil
1 stick Butter
1 cup Brown Sugar (lightly Packed)
2 Tablespoons Rosemary (minced)
1 medium red onion, sliced into 1/2 inch wedges
2 Macintosh apples, diced into smallish chunks

Prep. Time → 15 min

Cook Time → 50 min

1. Preheat your oven to 350 degrees. Nice n toasty.

2. Acorn squash. Two of them, so they won’t be alone when they croak. Cut them in half from top to bottom. They’re tough, so a sharp knife helps. See all the stuff inside? Just use a spoon to scrape it out.

3. Cut each half into four equal wedges, then place the wedges, skin side down, in a baking dish.

4. Drizzle the wedges with olive oil, then pop ‘em into the oven for about 20 minutes, just to get the roasting process started.

5. Meantime, mix softened (but still cool and somewhat firm) butter with a good amount of brown sugar. Then—and this is the delicious part—grab some fresh rosemary. Chop it up finely then throw it into the butter/brown sugar mixture.

6. Pull the squash out of the oven and generously smear the butter/sugar mixture on the top of each wedge. Add the red onion slices. Pop ‘em back into the oven, and wait for good things to happen (about 30 minutes, until brown and caramelized).

7. About halfway through roasting, when everything’s melted and bubbing, pull the squash out of the oven and brush the decadent mixture all over the wedges. Top with the diced apple, and drizzle a little more olive oil over the apples. Continue roasting until the squash is fork-tender.

8. The wedges should be brown…and caramelized…and fragrant…and irresistible.

9. Just serve the squash on the dinner table straight out of the baking dish. And right before dinner, drizzle lots of the sweet/savory sauce all over the squash one last time. Your guests will die right there on the spot. Delicious!
