Sweet potato, lentil and coconut soup

140g red lentils, 3 chopped sweet potatoes, 3/4 can coconut milk, 1 chopped onion, 1 clove garlic, pint veg stock, olive oil

Prep. Time → 10 min

Cook Time → 20 min

1. Heat some olive oil in a pan and soften up garlic and onions

2. Add in sweet potatoes and lentils and coat in mixture

3. Add coconut milk and veggie stock

4. Bring to boil then leave to simmer until soft enough to blend with hand blender

5. Season to taste and serve
