Tawa rice with green peppers

NOTES
(1) Requires pressure cooker or rice cooker
(2) Asian frying pan preferred
(3) tbsp = tablespoon; tsp = teaspoon

Basmati Rice: 1 cup

Bell Pepper, Green: 1 large
Onion: 1 to form 1 cup sliced

Ghee or Oil: 3 tbsp
Cumin Seeds: 1 tsp
Garlic Cloves: 2
Ginger: 1 tbsp
Salt: 1.5 tsp

Pav-Bhaji Masala: 1 tbsp
Dhana-Jira Powder: 1 tbsp
Garam Masala: 1/2 tsp

Water: 2 cups
Lemon or Lime Juice: one (big squeeze)

Prep. Time → 5 min

Cook Time → 30 min

1. ---Prep Work:
(1) cut green pepper into long strips
(2) cut onion lengthwise and slice (1 cup)
(3) crush garlic cloves
(4) chop (finely) ginger
(5) Pick through rice.

2. Cook Rice:
(1) Place picked-through rice in mixing bowl.
(2) Pour plenty of water and scrub gently
(3) Drain rice
(4) Repeat 1-3 a few times.
(5) Soak rice in 3 cups water for 10 minutes.
(6) Drain.
(7) Add 2 cups fresh water
(8) Cook in rice cooker or pressure cooker

3. Heat Ghee.
When hot, add cumin seeds.
When seeds begin to pop, add garlic and ginger.
Give it a quick stir.

4. Add sliced onion and pepper strips.
Stir for 2-5 minutes or until slightly tender.

5. Add all spices and salt.
Mix well.

6. Fluff drained rice and add vegetable and spice mixture.
Mix well (Cook all ingredients together)

7. Squeeze lemon or lime juice.
Fluff gently before serving.
