triangular burgers of Annie Veale - Recipefy

500g beef mince
200g kidney beans
half grated courgette
2 red onions
1 romano pepper
4 slices of chorizo
ground almonds and walnuts
1 beef tomato
cream cheese
relish or fruit chutney
mixed salad
mixed spice
chilli
nutmeg
cayenne
cloves
multi-grain wraps

Prep. Time → 10 min

Cook Time → 15 min

1. finely slice the red onions and soften in a pan with the chorizo

2. blitz the spices and cloves in a spice grinder

3. blitz the mince beans chilli and half the pepper and courgette in a food processor, add the chorizo and a spoonful of the onion, adding the spices and mix again.

4. When combined divide the mince mixture into 4 or 6 portions and shape into triangles, then thoroughly coat in the ground nuts before placing on a greased baking tray.

5. Place in oven on a moderate heat until cooked as you like, it takes about 15m to get them medium. Warm the remainder of the onions again.

6. Just before taking out the oven heat the wraps and spread some cream cheese with fruit chutney, place burger on top and a slice of tomato and a spoonful of the onion and a handful of salad leaves.

7. Fold the bottom of the wrap up first and then the left and right sides to make a wedge shape and serve with honey roast parsnip and salad.
