Tricolour meatloaf

500g Chicken breast
500g Pork mince
9-12 thick slices of smoked bacon
2 tbsp dark soy sauce
1 tbsp fish sauce
1 tbsp finely chopped basil or coriander, dependant on taste

Prep. Time → 15 min

Cook Time → 60 min

1. Set oven to 180C

2. Add chicken breast to a blender and mix until roughly blended. I like to leave big chunks of chicken in mine, but if you'd like a smoother finish blitz until no chunks are left.

3. Add pork, soy sauce, fish sauce and your herb of choice to a bowl and mix thoroughly. Season with a little salt and pepper.

4. Line the bottom of a medium sized loaf tin with 3 or 4 slices of bacon, then add all of your chicken. Press down firmly, then add another layer of bacon. Add Pork mix until you reach the full capacity of the loaf tin and top with one final layer of bacon.

5. Bake in oven for around an hour, or until you think it looks ready. The meatloaf will shrink a lot in the tin, and will end up swimming in it's own juices. This makes it really succulent and delicious.

6. Serve with chips, roast potatoes or even a simple salad. Trust me, people love this meatloaf!
