Vegan palak paneer

1 tsp minced fresh ginger
1 green chili, seeded and minced
1 tsp ground coriander
1/2 tsp paprika
1/2 tsp ground cumin
1/2 tsp turmeric
2 tsp coconut oil
2 bunches spinach or 2 - 10 oz packages
4 tbsp vegan creamer
1 package tofu 16-18 oz
1/2 tsp garam masala
1 tsp salt

Prep. Time → 15 min

Cook Time → 15 min

1. Steam spinach until soft or defrost. Blend in processor until smooth. Cut the tofu into 1/2 inch cubes. Set aside.

2. Heat oil in large saucepan over medium heat. When hot add ginger, chili and spices. Adding a tablespoon or two of water. Fry for about 2 minutes.

3. Add spinach and cook for about 5 minutes.

4. Then add the cream, tofu, garam masala, and salt. Cook for another 5 minutes.

5. Serve with rice and chapatti if preferred.
