Viddy’s best baba ghanoush

3 small to medium eggplants, roasted and unpeeled
3 cloves garlic, roasted
½ medium red onion, chopped
3 sprigs fresh cilantro
⅓ c tahini
1 tbsp olive oil
juice of ½ a lemon (~1½ tbsp)
1½ tbsp cumin
1 tsp salt
ground black pepper to taste

1. Combine all ingredients in food processor. Process til smooth. Best served warm.
