Lemon lentils

1 cup puy lentils
2 cups water
1 tbsp grated ginger
1 large red chilli
1 large bunch coriander
I large bunch silverbeet
Juice and zest of 1 lemon

T. Preparacion → 10 min

T. Cocinado → 20 min

1. Wash lentils and cook in a saucepan over medium heat for about 15 minutes.

2. In a large frying pan add oil and sauté ginger and chilli.

3. Add coriander and spinach and stir until wilted.

4. Add lentils and any remaining cooking water. Add 1/2 tsp salt and simmer for 5 minutes.

5. Stir through lemon zest and juice and serve.
