Oatmeal Peanut Pancake Mix  de Cynthia Miller - Recipefy

3 Cups old fashioned Oats
1/2 Cup Coconut Flour
2 Cups Protein Plus Peanut Flour
1/2 Cup Ground Flax Seed
3 T Baking Powder
1/2 t Sea Salt (or to taste)

1. Add all ingredients into a food processor and grind until blended and oats are ground to a course flour. Store in an airtight container in the refrigerator.

2. To make a large pancake take 1/4 cup of mix, 1 large egg, 2 T of unsweetened coconut milk beverage (water or milk works as well) and stir until well mixed. Spray skillet or griddle with PAM. Pour batter into heated pan and spread with the back of the spoon if needed. Flip when bottom is brown and cooked through. These cook in a few minutes just like normal pancakes. The texture is light and fluffy and very tender so be careful when flipping. Serve with berries.
