Sataras (bosnian vegetable stew)
1 medium white onion – finely chopped
Extra small carrot – finely chopped
Same amount celery – finely chopped
Pinch of dried oregano
3 cloves garlic
1 tbsp tomato paste
½ green paprika
½ red paprika
6 button mushrooms
1. Heat the oil. Saute the finely chopped onion, carrot and celery over low heat. Cover to sweat the vegetables. Stir occasionally. About 5-7 minutes. Add pinch of dried oregano.
2. Add the tomato paste and mix well. Add a bit of stock to deglaze the pan. Add the aubergine, paprikas and mushroom. Mix well. Let the vegetables sweat while stirring occasionally. Add more stock and bring to boil.
3. Simmer until vegetables are cooked. Add the chopped tomatoes, parsley and seasoning. Simmer until tomatoes are warmed through.
4. Serve with a dollop of sour cream or parmesan, depending on preference, and some crusty bread. I usually have this as a main, but it can be served as a side dish, with other accompaniments.
