Homemade blueberry turnovers recipe

3 sheets of puff pastry, thawed
3 oz cream cheese, softened at room temp
1/2 cup granulated sugar
1/2 tsp vanilla extract
1/2 tsp lemon zest
2 tsp lemon juice
1 egg yolk
1 cup blueberries
2 tsp corn starch
1 pinch of salt
1 egg wash: (one egg beaten with a touch of water)
1 powdered sugar, for topping

Prep. Time → 10 min

Cook Time → 25 min

1. * Keep puff pastry in fridge before use*

2. 1. Preheat oven to 375* Take a baking sheet, and line with parchment paper.

3. 2.In a bowl, add cream cheese, egg yolk, vanilla extract, lemon zest, half of sugar: mix.

4. 3.In a bowl with blueberries, add in the remaining sugar; corn starch. Lemon juice; toss together. Let sit for a few mins.

5. 4.Flour surface; take puff pastry, open flour puff pastry a little on top, and take rolling pin, and roll out a little.

6. 5. Take a 4'' round cutter, and put on puff pastry; take a knife, and cut out, and put on baking sheet.

7. 6.DO NOT OVER FILL, or it will explode; take your cream mixture, and put in center of each one: Take a TBSP of the blueberry on top of that.

8. 7.Take egg wash, and brush around the edges.

9. 8.Fold each one, in a half moon shape, and seal the edges. Take a sharp knife, and make slits in middle. Brush top with more egg wash.

10. 9.Put in oven for 25 mins, and put in top or lower rack of oven. Let cool 10 mins. Put on plate and sprinkle confectioner sugar.
