Peanut butter cookies

45ml ( 3 level tbsp ) peanut butter,
grated rind of 1/2 an orange (optional)
50g ( 2 oz ) caster sugar
45 ml ( 3 level tbsp ) soft light brown sugar
50g ( 2 oz ) butter
1 egg (beaten)
100g ( 4 oz ) self raising flour
Vorb. Zeit → 10 Min.
Koch Zeit → 25 Min.
1. 1. mix the peanut butter, orange rind, sugars and butter together untill the mixture is light and fluffy.
2. 2. beat in the egg and stir in the flour to make a fairly firm mixture
3. 3.using your hands, roll the mixture in to small balls about the size of a walnut and place them well apart on an ungreased baking sheet
4. 4.dip a fork in a little bit of flour and press criss-cross lines in the top of each cookie
5. 5. bake at 180°C ( 360°F, mark 4 ) for about 25 minutes, until they are risen and golden brown.
6. 6. remove the cookies from the baking sheet and put them on a wire rack to let them cool.
7. 7. enjoy!
