Riced cauliflower

1 head cauliflower
1/4 chopped onion
1 chopped garlic clove
2 tbsp olive oil

Optional: add shredded carrots or a handful of greens

Vorb. Zeit → 5 Min.

Koch Zeit → 10 Min.

1. 1. Use a food processor to "grate" the cauliflower - this is the easiest way to get it done.
2. Saute garlic and onion in the olive oil (add any other crunchy veggies at this time ex carrots).
3. When the onion is softened - add all of the cauliflower and sauté. Add in greens at this time if using.
4. Stir occasionally over medium heat for 5-10 minutes.
5. Salt and pepper to taste and enjoy!

2. Leftovers are also a great addition to salads.
