Anzac biscuits

125g coconut oil
30g agave syrup or golden syrup
0.5 teaspoon bicarbonate of soda dissolved in 2 tablespoons hot water
150g oats
100g dessicated coconut
45g plain flour (white or wholemeal)
45g ground almonds (you can just use 90g flour if you prefer to omit almonds)
75g soft brown sugar
1 teaspoon cinnamon (optional)
T. Preparacion → 10 min
T. Cocinado → 10 min
1. Preheat oven to 180 C fan / 200.
2. Melt the coconut oil and syrup gently in a pan. Once melted add the bicarb/water.
3. In a bowl mix the oats, sugar, flour, almonds and coconut plus cinnamon if using. Add the oil mixture and stir well. Use your hands to shape into balls - approx golf ball sized. You should make 10-12.
4. Place onto a lightly oiled baking sheet allowing a little space between them & bake for 8-10 mins until golden brown.
