4 medium potatoes
1 tablespoon mayonnaise
1/4 teaspoon French mustard
2 rashers bacon (chopped, grilled & crispy)
1 teaspoon sour cream
salt & pepper
1 egg yolk
30g (1 oz) butter
T. Preparacion → 20 min
T. Cocinado → 60 min
1. Bake the potatoes in the skins.
2. When potatoes are cooked remove from oven and cut the top off them. Gouge out about 2/3 of the flesh and place in a bowl.
3. Combine all ingredients except the bacon with the mashed potato flesh. Fill the potato skins with the mashed potato, sprinkle with bacon and return to the oven until re-heated.
4. Serve with a roast or bbq lunch.
