Baked Cod with Mango Pineapple Salsa de Michelle - Recipefy

Salsa
2/3 cup diced peeled ripe mango (1 medium)
2/3 cup diced fresh pineapple
2 tablespoons minced red onion
1 1/2 teaspoons chopped fresh cilantro
1 1/2 treaspoons fresh lime juice
1/8 teaspoon salt
1/8 teaspoon black pepper

Fish:

Cod (about 1/3 to 1/2 lb per person according to the fish counter guy)
Salt
Pepper
Butter

1. To prepare the salsa, combine the salsa ingredients, cover and refrigerate.

To prepare the fish, preheat the oven to 450 degrees.

2. Use a big piece of foil. Place the fish in the foil and season with salt and pepper.

3. Add a few small pieces of butter around the fish.

4. Wrap up the edges of the foil packet around the fish (so it is in a little foil tent, you want it to be able to steam in there so make sure it is totally covered) and bake for about 20 minutes or until the fish flakes easily with a fork.

Serve the fish with the salsa and enjoy!
