Braised beef short ribs

1kg beef short ribs
30ml olive oil
4 garlic cloves, thinly sliced
6 springs fresh rosemary
30ml rosemary springs, chopped
5 springs fresh oregano
5ml dried oregano
juice of 2 lemons
125ml dry white wine
2 red onions, quartered
1 whole garlic bulb, skin on, broken
salt and freshly ground black pepper, to taste
T. Preparacion → 20 min
T. Cocinado → 100 min
1. preheat oven to 200C
2. place short ribs on large baking tray.
3. add olive oil, garlic cloves, rosemary springs, chopped rosemary, oregano springs, dried oregano, lemon juice, wine, onions and whole garlic
4. season, cover with foil and bake at 200 for 20min then lower to 180C and roast for 1 hour
5. after hour, remove foil, adjust seasoning and roast for remaining 20min
6. remove from oven and rest for 5min before serving
