Butternut lentil soup sw

Ingredients
- 2 stalks celery, chopped
- 1 onion, chopped
- 1 red pepper, chopped
- 1 carrot, chopped
- 1 small butternut squash, peeled and chopped
- 1 potato, peeled and chopped
- 960ml (32 fl oz) vegetable stock, made with Vecon
- 100gm (3½oz) split red lentils
1. Method
1. Dry fry the vegetables in a large pan for a few minutes until the onion softens.
2. Add the stock, lentils and seasonings. Simmer for 30-40 minutes. Cool slightly then puree in a blender.
3. Reheat and adjust seasoning if necessary.
