Chicken cacciatore
Receta por
250ml cake flour
salt and freshly ground black pepper, to taste
30ml olive oil
8 chicken thighs
1 onion, chopped
2 garlic cloves, chopped
1 green pepper, seeded and chopped
1 x 410g tin chopped tomatoes
3ml dried oregano
125ml white wine
1 punnet portabellini mushrooms, halved
fresh flat-leaf parsley, chopped, to serve
T. Preparacion → 30 min
T. Cocinado → 45 min
1. combine flour and seasoning in plastic bad. add chicken pieces and coat well
2. heat oil in casserole pan. fry chicken pieces in batches until golden on both sides. remove from dish and set aside
3. add onion, garlic and green pepper to pan and saute until onion is golden brown
4. return chicken to pan and add tomatoes, oregano an white wine
5. season well, cover with lid and simmer for 30min over medium heat
6. add mushrooms, adjust seasoning and simmer for 10min
7. garnish with parsley
