Creamy tortellini pasta with butternut squash recipe

3 cups butternut squash: cubed
1 shallot, chopped
1 few leaves of fresh stage: un chopped
1/4 cup heavy cream
1/2 cup fresh grated Mozzeralla cheese
8 oz three cheese tortellini pasta
5 cups vegetable stock
2 Tbsp olive oil
1 salt and pepper

T. Preparacion → 10 min

T. Cocinado → 35 min

1. 1. In a sauce pan, medium high heat, add olive oil.

2. 2.Add butternut squash cubes, and shallot. Cook 3 to 4 mins.

3. 3.When done, add vegetable stock:

4. 4.Add a few leaves of stage: unchopped: bring to a boil, turn to medium-low, and simmer for 25 mins: or until butternut squash is super tender.

5. 5.Take out leaves: add uncooked pasta: let cook for 10 mins: till pasta is cooked through.

6. 6. Add salt and pepper: add heavy cream, and mozzarella. Stir.

7. 7.turn off and cover for 5 mins.

8. 8.when done, scoop pasta in bowl, and add fresh parsley on top
