Lamb spine pie

2.5 kg lamb spine and sides
30ml lamb fat
380ml meat stock
3 cloves
1 laurel leaf
10ml fresh thyme
12.5ml salt
pepper to taste
130ml dry white wine
1 egg, separated
400g pie crust dough

T. Preparacion → 30 min

1. Cut meat into blocks

2. Heat fat

3. Brown meat

4. Add stock, cloves, leaf, thyme, salt and pepper to meat and heat to boil.

5. Lower heat and simmer till meat is tender

6. Add boiling water when needed.

7. Remove bones, tendons, etc. cloves and leaf.

8. Add wine and heat to a boil.

9. Sauce should be 500ml.

10. Add some of the sauce to egg yolk and mix.

11. Add mixture to meat and mix in.

12. Place meat in oven dish and brush beaten egg white to sides of the dish.

13. Place rolled out dough on top to cover.

14. Make a few holes on dough so steam can escape.

15. Bake in preheated oven at 220 degrees Celsius for 10min.

16. Lower to 180 degrees Celsius for another 10min until golden brown
