Oatmeal buttermilk pancakes

1 ¼ cups old-fashioned oats, not instant or quick cooking 2 cups buttermilk 2 eggs 1 cup all-purpose flour 3 Tbsp. sugar 1 tsp. baking powder 1 tsp. baking soda ½ tsp. salt ¼ cup vegetable oil ¾ cup chopped pecans ½ tsp. vanilla

1. In a medium bowl, stir together oatmeal and buttermilk until well coated. I did this and then let this mixture sit until I mixed the dry ingredients. Stir in egg, which I beat slightly with a fork, until blended. Add dry ingredients, oil, and pecans. Preheat a griddle or large skillet. Test to see if it is hot enough by dropping a drop or two of water on the griddle. If it dances the griddle is hot enough. Drop the batter by ¼ cup onto the griddle. Reduce heat to medium. Cook until bubbles appear around the edges and bottom is golden. Turn and cook until golden and firm.
