Babaganoosh
Ricetta di Holly Louise
1 eggplant
4 cloves garlic
2 TB tahini
Juice of 1 lemon
1/2 cup parsley chopped
pinch cumin
1/4 cup olive oil
Preparazione → 5 min
Cottura → 45 min
1. Preheat oven to 400 degrees
2. Slice eggplant in half long ways
3. Roast eggplant a whole cloves of garlic in a glass dish for 45 minutes (or until very tender)
4. Scoop insides of eggplant out of skins & place in a bowl
5. Smoosh in the garlic
6. Slowly add the olive oil, tahini, lemon juice, parsley & cumin
7. Mix until a smooth texture
8. Enjoy with pita!
