Basic sweet and sour sauce

1 table spoon good quality white or red wine vinegar.
300ml Orange juice
Desert spoon soft light brown sugar
Tablespoon soy sauce.
Length of orange zest pared off with a potato peeler.
Small piece of ginger
Pinch of five spice powder.
Nob of butter
Desert spoon cornflour

Preparazione → 10 min

Cottura → 5 min

1. Cut the orange zest and ginger into thin strips and fry lightly in the butter with the five spice powder.

2. Mix the vinegar, sugar, soy sauce, orange juice and cornflour in a jug. It is a good idea to taste this mixture at this stage, Although it is thin and watery you will get an idea of the balance of sweet and sour and can adjust to your taste.

3. Add this to the butter in the pan and stir over the heat until thickened. Once thickened remove from the heat and further taste and adjust if required. Add to your meat dish.
