2 tablespoons vegetable oil
5 cloves garlic, finely chopped
1/2 tsp dried chilli flakes or fresh chillies to taste
2 cups cubed skinless, boneless chicken breast meat or pork (5 escalopes) or prawns
1 cup dried (jasmine) rice, cooked and chilled
1 tablespoon white sugar
1 tablespoon fish sauce
1 tablespoon soy sauce
4 teaspoons chopped green onion
2 tablespoons chopped fresh basil leaves (or small bunch)
5 tablespoons chopped fresh coriander (or large bunch)

Preparazione → 15 min

Cottura → 15 min

1. Heat the oil in a wok or large skillet, over medium-high heat.

2. Fry the garlic, then add the chili pepper and meat, and stir-fry until cooked through.

3. When the chicken is cooked, add the rice, sugar, fish sauce, and soy sauce.

4. Cook over medium heat, stirring gently.

5. When the mixture is well blended, stir in the green onions, basil, and cilantro.

6. Cook for 1 more minute, then serve hot.

7. Add more/less coriander/basil/chilli to taste - can add 2 beaten eggs at the beginning and scramble or add after rice. Also try half sesame oil. And lastly add crushed unsalted peanuts like pad thai.
