Irish beef stew

Ingredients
500g of stewing beef (any visible fat removed)
2 large carrots, sliced
2 onions, chopped
2 sticks of celery, chopped
2 cloves of garlic, chopped
2 large potatoes, peeled and each potato cut into 6 pieces
1 small rutabaga or swede, peeled and chopped into chunks
500ml of vegetable stock
500ml of beef stock
Pam Spray or Frylight
Thyme and Rosemary
Bay Leaf
Salt and Pepper to season
1. Method
2. Place a large saucepan over a medium heat and spray with Frylight or Pam spray.
Add the beef and brown, remove from pan.
Spray with some more Frylight and Pam spray and add the onion, garlic and celery.
Cook until softened, add a little stock to stop from sticking if needed.
Add the carrots and cook for a further 3 mins.
Return the beef to pan and mix thorough.
Add the potatoes, and Rutabaga, along with vegetable stock and beef stock (should just about cover all the meat and vegetables, add a little more stock if needed)
Add some Thyme, Rosemary and Bay Leaf
Season with salt and pepper to taste.
Bring to the boil, then cover and simmer on a low heat for approx 2 hours.
A delicious winter warming dish.
