Open Faced Blackened Catfish Sandwiches di Michelle - Recipefy

Cajun seasoning
4 catfish fillets
2 teaspoons olive oil
2 cups packaged cabbage-carrot coleslaw
Coleslaw dressing
2 hoagie rolls

1. Heat a large skillet over medium to medium high heat. Add oil to the pan, stirring to coat.

2. Sprinkle both sides of the catfish filets with cajun seasoning.

3. Add fish to the pan and cook until fish flakes easily with a fork (depending on thickness, ~5 minutes per side).

4. Combine the coleslaw and coleslaw dressing in a bowl.

5. Split the hoagie rolls lengthwise in half. Toast until lightly browned.

6. Spoon coleslaw mix onto each side of split and toasted hoagie rolls. Top with catfish.
